"An-pan", bean-jam bun

"An-pan" is a round soft bread with "anko" (azuki-bean jam) in its center.
The originator "Yasubee Kimura" sold it in Ginza at early years of Meiji era.
It is very popular sweetened bun in Japan, and it is liked by any people
regardless of age or gender.

In Japan, there is really famous animated cartoon called "Anpan-man".
The face of the chief character named "Anpan-man" is made of "An-pan".
He shares his face with hungry persons.

“Kakigori”, shaved ice with flavored simple syrup

“Kakigori” is a Japanese summer desert made of shaved ice, served with colorful syrups.
Sometimes it is served with assorted toppings such as condensed milk, "An"(bean-jam) on the top.
People in Japan enjoy it at the stands at the festival.

菱餅/Hishimoti

「ひし餅」は「ひな祭り」に食べる3色のひし形の餅です。
見た目も美しく、縁起がよい食べ物です。

”Hishimoti" is red white and green lozenge-shaped rice cakes eaten on "Hinamatsuri".
The good presentation delights our eyes.
It is said that it brings good luck if we eat it.

大学いも/Candied sweet potatoes

さつま芋を揚げた後に、砂糖を水に溶かして煮詰めたものでからめ、
仕上げに黒ゴマをかけたお菓子です。
大学いもという名前の由来は昭和初期に帝国大学の学生が学費を捻出するために、
これを作って売った説や、
帝国大学前にあった、ふかしいも屋で初めて売り出され
学生に人気があったためという説があります。

”Daigakuimo" is candied sweet potatoes with black sesami.
There are sevetal views about the origin of the name.
One of the view is that students in the imperial University at early Showa era made it to earn money for school expenses.
Another one is that ”Daigakuimo" was for the first time in Japan at the sweet potato shop in front of the imperial University, and it gets famous amoung the students.

ぜんざい/sweet red bean soup with rice cakes(with rice-flour dumplings)

冬によく食べられる甘くて温まるスイーツです。
小豆あんの中に餅や白玉だんごが入っています。
地域や小豆あんの状態によって、「おしるこ」と呼ばれます。

"Zenzai" is mainly eaten in winter season in Japan.
It is so sweet and warms one's heart and body.
It is made of chunky red-bean paste(it contains sugar)and rice cakes(or rice-flour dumplings)
It is also called "Oshiruko" depending on regions or state of soup.

栗きんとん / kurikintons

栗きんとんは秋を代表する和菓子ですが、
栗の風味を生かしたほのかな甘さのため老若男女に好まれます。

作り方は栗を茹で少量の砂糖と塩を加えた後、少し粒が残る程度まで、 つぶします。
その後、練り上げて丸い形に仕上げてから茶巾絞り*をして形を整えます。

同じ名前でおせち料理の1品にも「栗金団」がありますが、 こちらは、茹でたさつま芋を裏ごしし、
砂糖を加えて栗の甘露煮と一緒に練ったもので、とても甘く日持ちもします。

*茶巾絞り(Tyakinsibori) やわらかいあん状のものを布巾で包んでひねり、絞り目をつけること。



Kurikinton is a representative Japanese style sweets.
When Japanese people eat it,they feel autumn.
Its delicate sweetness is loved by any people regardless of age or sex.

How to make "Kurikinton":

Mash Boiled chestnuts, sugar, salt roughly.
Finally get them into "tyakinsibori" shape.

*Tyakinsibori
Rap the tender jam-formed thing in a dish-cloth and leave a mark on it.

"Kurikinton" in "New year Oseti cuisine" has the same name as the above-mentioned "Kurikinton". But there are differences between them.the latter one is made from boiled sweet potates and candied chestnuts. It is very sweet and it keeps for a long time.

あられ / Cubic rice crackers

日本のお茶うけのお菓子の代表はやはりお米の国日本ということもあり 米菓のおせんべい、おかき、あられです。
一般的には焼いたり揚げたりした後に醤油や塩で味付けされたものが多いです。
3つの違いを説明します。

「せんべい」はうるち米で作られたものです。*
「おかき」と「あられ」はどちらも、もち米で作られていますが、 小さい物を「あられ」と呼び、大きさで区別しています。
もちを砕いて大鍋で炒る音が「霰」に似ているために 「あられ」と呼ばれるようになったそうです。

*もともとは原料で名前が決まっていますが、 一般的には「せんべい」は平たいものをイメージする人が多く 小麦粉で作られた砂糖が入ったお菓子で「せんべい」と 呼ばれているものもあります。

Rice is our culture.
So in Japan, we often eat rice crackers such as Senbei, Okaki, Arare to go with Japanese tea.

Senbei is made from non-glutinous rice.
Okaki and Arare are made from glutinous rice.
Among them, we say small one Arare, big one Okaki.

Originaly, we distinguish them by ingredient.
But now, sometimes people say flat rice crackers "Senbei".
Also, some crackers made from flour are called "Senbei".

たい焼き / taiyaki, fish shaped cake

小麦粉、卵、砂糖、重層などから作った生地に あんこを入れて鯛の形の焼型で焼いたものです。
明治時代から食べられており、 見た目のユニークさで子供からお年寄りまで 幅広い層に好まれています。

Taiyaki, fish-shaped cake is the Japanese style sweets.
The basic ingredients are flour, eggs, sugar, bakin soda.
Since Meiji Era, we Japanese love it because of it's lovely shape.
